Extra-virgin Olive Oil

The variety of olives used in the production of the oil “Capitolo” combines the “Cima di Melfi”, the “Racioppa” and the “Coratina”. Its appearance is clear when filtered, with a wonderful green colour with golden reflections. Its aroma is medium fruity, net of olive, with herbaceous notes of artichoke and ripe fruit.


The taste opens with a slight sweet sensation followed by a pleasant bitter and spicy charge of medium intensity, persistence rich in vegetal notes dominated by the herbaceous sensation of artichoke. How to taste it? Obviously uncooked in soups, vegetables, legumes, meats, bruschetta, pinzimonio, salads and fish of medium flavor. Quality and passion are always in first place here!
