Olive oil is one of the basic foods of the Mediterranean diet. Specifically, extra virgin olive oil is a high quality product, obtained by simple cold extraction (around 27 °C) and without any chemical treatment. Cleanliness, efficiency and quality are the characteristics of the extraction plant of Masseria Il Capitolo, where we produce our oil and/or treat your olives.

OLIVE PROCESSING
Initially, your olives are carefully transported by our means and placed in large containers for storage. The next stage consists of preparing the olives for the most important process in the production chain: cold pressing, which gives us a product that offers itself in its beauty and goodness.
A marvel that we will never stop loving. The olives, finally, are transformed into genuine oil that will enrich our tables.
